Pear, feta, roasted walnut and pumpkin salad

THIS IS ONE OF MY CHRISTMAS FAVOURITES, not only is it a crowd pleaser it is crisp, fresh and sweet!


Ingredients: • 2-3 cups of rocket + spinach mix (200g bag) • 1 green pear, sliced thinly • ¼ cup of walnuts (toasted if you like – for 3 minutes! AMAZING!) • 50 g Danish feta • Olive oil spray • 1 beetroot • 400g pumpkin

Method: 1. Add rocket, pear, walnuts to a bowl and mix thoroughly. 2. Meanwhile dice the pumpkin in 2cm x 2 cm cubes, cover in olive oil spray, cinnamon and pink salt. 3. Peal the beetroot (wear gloves!!!) – slice thinly and spray in oil. 4. Add vegetables to a baking tray and bake for approx. 20 minutes (let cool before adding to salad! 5. DRESSING Option 1 - Balsamic vinegar Option 2 – Mix 1 tsp honey, 2 tsp soy sauce and 1 tsp of teriyaki sauce (AMAIZNG!)
